WIAW: A Little Twist

Hello, friends! I hope you all are having a fantastic week. So sorry to have left you high and dry yesterday. We are in the middle of our state testing at school so by the time I got home it was all I could do to get a workout in and eat dinner before I absolutely crashed. Let me tell you, the weekend cannot get here fast enough.

I completely forgot to acknowledge Earth Day on Monday! Did anyone do anything to celebrate? I saw a ton of fun pictures all over Instagram. Monday afternoon I had my own small Earth Day celebration by sitting outside and reading my book in the sunshine for a little bit. It felt so good, and I think I might have to make that a more regular occurrence!


It’s time for another look at what I’ve been eating lately, and I know you’ll all be so surprised to learn that I haven’t mixed it up much at all. This is why I don’t document my food daily. So much of it is exactly the same! I think you’ll notice that I did put a bit of a twist on some of my favorite eats to keep things interesting. Thanks, as always, to Jenn for hosting!


Breakfast was oatmeal as usual although I had fully intended to mix up some pancakes. It’s been weeks since I’ve had any because we’ve been out of town for the last two weekends, and I am seriously craving them! Unfortunately, I realized late last night that we were out of milk, and the desire for pancakes wasn’t strong enough to get me out of the house and to the store. Instead I played around with my oats a bit this morning and made them really special.


These are Chocolate Peanut Butter Oats. I took my plain oatmeal and stirred in a heaping tablespoon of Peanut Butter & Co.’s Dark Chocolate Dreams peanut butter and 1/2 a tablespoon of cocoa powder. I topped the whole thing with an apple, and I really think I’ve hit on a winning combination. It really felt like dessert for breakfast!

Although I had my standard salad at lunch, I did pair it with something a little different. As I did my weekend grocery shopping on Sunday, I found myself in the dairy section and spotted some cottage cheese. For some reason it sounded so good so I grabbed a container. I finally broke into it at lunch today, and mixed some pineapple with it. Yum! My mom used to eat this all the time while I was growing up, and I remember thinking how gross that was. It took me awhile but I’ve developed a taste for it. I didn’t know what I was missing!


Of course I had my yogurt bowl for my snack as soon as I got home.  Lately, I’ve been starving by the time I get home in the afternoons.  I think it’s all the Insanity workouts we’ve been doing!  Today was no exception so I wolfed down my bowl in record time.  Today’s flavor was the Chobani Raspberry.  Isn’t funny how you go through phases?  A few months ago, I couldn’t get enough of the pomegranate and now I’m all about the raspberry!  I would also like everyone to take notice of the fact that there are no banana chips in my bowl.  That’s right-I’m staying strong!  It’s been almost a month since I’ve had any.  I won’t lie to you though.  I want them just as much as ever!


So I have to tell you about dinner last night.  I’ve been a fan of Skinnytaste for a while now, and last night I made her Healthy Baked Chicken Nuggets.  These were a definite homerun.  I loved these, and John gave them a big thumbs up as well.  I think they’ll being making their way on to the regular rotation.


A little dessert might be in order before bed time, and I noticed that our local snow cone place has opened up.  I think John and I might have to make a trip!  Please excuse me while I go try to convince him.  Have a great evening!

    I pinned Gina’s recipe for healthy chicken nuggets literally ages ago, and still haven’t tried them! Crazy how easy I forget about recipes I want to try (I blame a busy schedule). Knowing that they’re a homerun though, I might need to make sure I try them sooner rather than later!

    I love that Native American quote – so true. I’ve been riding my bike to work (when it’s not raining) and I spent some of the weekend at a Green Festival in NYC learning about some little things we can do to better the environment!
    Homemade chicken nuggets are the greatest – my mom used to always make them as a kid. I have to create a decent gluten free version because now I’m craving them!

    I wish I liked cottage cheese but I just can’t get over the texture. I’ve even tried it with a ton of fruit and nope. Not a fan. I do; however, really like adding it to smoothies. DashingDish.com has a TON of great recipes for delicious smoothies that incorporate cottage cheese :)
