Merry Christmas Eve! I hope you all are home and celebrating with your families today. I know blog reading is far down the list of things everyone is doing so I’m going to keep this short and sweet. But I couldn’t let the holiday pass without one more quick recipe.
This recipe is incredibly special to me. My mom has made it every year for as long as I can remember, and it definitely ranks up there among my favorite desserts of all time. I finally asked my mom for the recipe this year, and I whipped it up yesterday afternoon. It’s super easy so it’s not to late to add this to your holiday line up.
I’ve heard this dessert called my several different names over the years. We simply call it 4-layer dessert, and I’m betting you’ll call it is delicious! Enjoy!
1 stick of butter melted
1 cup of flour
1/2 cup chopped nuts
Pre-heat oven to 325 degrees. Combine all ingredients and press into a 13 x 9 inch pan. Bake for 15 minutes or until crust is golden brown. Cool completely.
8 oz. cream cheese, softened
1 cup powdered sugar
1 cup Cool Whip
Cream sugar and cream cheese together. Fold in Cool Whip and spread over the first layer.
2 regular boxes of chocolate, lemon, or vanilla pudding (we always use chocolate!)
Prepare pudding according to package directions. The recipe calls for regular pudding, but I used instant and it worked fine! If you do use the kind you have to cook, be sure to cool completely before spreading onto the second layer.
Spread remaining Cool Whip on top of pudding layer and sprinkle with chopped pecans.
