Tea and Crumpets

Once again, the weeks are flying by.  I’m busy playing catch up after a week off from work.  How many days until Christmas break again ;) ?  Aside from the various school related things keeping me busy this week, I’m also working hard at the Pile on the Miles challenge.  Around the middle of last week, I realized that I could actually hit my 150 mile goal for the month of November if I got myself in gear!  I have 14 miles to go and three more days to get it done.  Wish me luck!

In other news, it’s once again time for What I Ate Wednesday, courtesy of Jen.  Since we’re in between holidays right now, I’m afraid my eats won’t be quite as yummy as last week, but I still have some interesting things to show you!

Breakfast this morning was definitely different.  This actually a picture I took last week, but, since it was so dark when I ate this morning, I decided to share this one today!  I got these little beauties in my Foodie Pen Pal box this month which I will be sharing with you all on Friday.  They’re crumpets!  I’m sure most Americans are like me and can’t say crumpets without affecting a horrible British accent.  This was my first foray into this typically British food, and they are definitely different.  They have a very sponge like texture, and, once I got pass how different they are, I decided I really liked them!  I toasted them and topped them with a little pumpkin butter and syrup.  I paired them with an apple, and, of course, enjoyed some tea on the side.  Can you really have crumpets without tea?

I’m always in charge of bringing lunch for our weekly book club meeting at school.  The kids and I all fell in love with this soup last year, and they now request it pretty frequently.  It’s a homemade Chicken Tortilla Soup, and I’ve now enjoyed the leftovers for two lunches and two dinners.  This stuff is so good!  I had my customary salad on the side.  Incidentally, I can never say “on the side” without saying “on the side is a very big thing for you.” (<–name that movie!)

The afternoon snack is no big surprise to anyone!  However, it is a little different for me because I had never tried the Chobani strawberry banana.  Holy moly!  Why did I wait so long?  Did you guys know about this?  Of course, I added an apple, Craisins, and Love Grown Apple Walnut granola.  I was out of my beloved banana chips so I just added an extra helping of granola!

I waited until later to post this evening because I really wanted to share tonight’s dinner.  This is my absolute favorite lasagna.  I don’t make it too often, but every time I do I’m just in heaven.

    Is it When Harry Met Sally?!?! Do I know that only because you inspired me to watch it?!?! Vigorous head nod!!
    I’ve had crumpets, but I have to admit, I prefer the nooks and crannies of English Muffins more.
    And I’ve been making yogurt bowls of my own. LOVELOVELOVELOVELOVE them!! Although blood orange flavour is weird … just tossing that out there. haha.

      :) Yay! I’m so glad you got it! It’s the best movie ever. I think I agree. The crumpets weren’t bad, but I definitely would take an English muffin over them. I also agree that blood orange is weird. I tried it once, and I wasn’t a fan!

    Ah, crumpets! I tried them when I studied abroad in London! I actually took a called called “Food, Culture, and Society,” so we went on a bunch of food-related field trips and even spent an entire class sampling typical British cuisine. I couldn’t wrap my head around the spongy texture; I definitely anticipated something similar to an English muffin, so it was shocking to say the least. Have you tried digestives? Now those are tasty–basically a cookie-shaped graham cracker, and some are even covered with chocolate on one side. Those I would eat by the sleeve!

        Natalie, I was in food heaven. It was amazing. We went to a local brewery, a super swanky “New British” restaurant .. and to the best Indian restaurant ever. We did have reading and homework, of course, but nothing too taxing. Oh, and we watched a ton of Jamie Oliver, too. :)

    Looks like a great day of eats! When I read the title tea and crumpets, I thought it was a joke! I barely knew crumpets were a real thing, haha! Way to go with the pile on the miles challenge, you’re definitely gonna reach that goal! Super impressive! :)
