My in-laws are out of town so John and I are checking in on the house and getting the mail. I was sitting in the car last night waiting on him to finish up when I noticed the gorgeous sunset that was happening. I realized my camera was in my purse for once so I snap a quick photo. I still can’t get over the quality of the pictures with my new camera! I definitely owe John a pretty awesome Christmas present this year ;).

I had originally planned on making this a Trail Food Edition, but because our hike this weekend was a bit unusual I didn’t really feel like my food pictures captured the true essence of backpacking. You better believe that post will be coming at you in the future though!
Instead of trail food, I have a mid-week treat to share with you. Since we were gone last weekend, I missed my usual Saturday morning pancakes. This morning I decided there was no reason why I couldn’t whip up a quick batch before work. I used this recipe as a base, but made a few modifications that included adding apple butter to the batter. I topped them with sugar-free syrup and a little bit more apple butter. Please try these. You will not be sorry!
Lunch was a slight detour from the norm. I had my usual salad topped with honey mustard, feta, carrots, and veggie chips, but I paired it with an apple and a little bit of the Peanut Butter & Co.’s White Chocolate Wonderful peanut butter. When I was packing my lunch this morning, I decided if I wasn’t having peanut butter with breakfast, I had to have it with lunch! I forgot how much I love this combination! I used to snack on apples and peanut butter constantly, but the habit fell to the wayside when I realized I was overdoing it on the peanut butter. I may have to bring it back in moderation.
I may or may not have snacked on this little gem this afternoon. Hey, I could feel my blood sugar getting low ;)!
After last week’s disastrous combination of pumpkin and plain yogurt, I am happy to report that today’s yogurt bowl was back to the usual. Today’s flavor was Chobani Apple Cinnamon, and I threw in my usual mix of an apple, Craisins, Love Grown granola, and banana chips. Have I admitted just how addicted I am to banana chips? I would be seriously embarrassed to tell you how many bags I go through a week!
On the menu tonight is grilled cheese sandwiches and soup. There are two important reasons for this. 1) It’s just the time of year for soup! and 2) I really want to take advantage of a bakery fresh loaf of bread that we got at the BOC last weekend. This bread is ridiculously good. John has enjoyed several slices slathered with strawberry jam this week.
This was the slice he had last night along with this dinner.
This is Cheeseburger Pie. It reminds me of some 1950s casserole, and I know that “serious” cooks would probably cringe at the sight, but I will admit no shame because this is a cinch to throw together and so delicious.
All in all this has been a pretty good few days of food. I’m heading south to celebrate Thanksgiving with my family this weekend, so next week’s WIAW will be very special! Happy Hump Day!
